This is something I clipped out of a magazine a few years back. We are out of control with these in the summer time - so amazing that 5 ingredients can taste so good!
Avocadoes
Olive oil
Your favorite salsa
Shredded white cheddar cheese
Fresh lime juice
Cut the avocadoes in half and rub them with olive oil. Grill pit side down for ~3 minutes, turn over and fill holes with salsa and cover with cheese. Close the lid of the grill and leave them on for ~3 minutes. Squeeze with fresh lime juice before serving. (I do not grill, that is all Jon so I don't know how hot the grill is when he does these - I think he just puts them on the side when he's grilling other things).
