This recipe comes from a cookbook "Recipes from Italian Families" that our friends Greg & Tricia gave us back in 2000. We have tried several recipes from that book, this is one that stuck!
4 boneless, skinless chicken breasts, grilled and cubed
1 Tbsp. butter
1 Tbsp. olive oil
1 small onion, chopped
28 oz. can chopped tomatoes, drained
1 c. heavy whipping cream
¼ c. vodka
1/8 tsp. dried crushed red pepper (or cayenne pepper)
1 lb. penne, cooked and drained
Grated parmesan cheese

Melt butter with olive oil in large heavy saucepan over med. heat. Add onion and saute until translucent, about 8 min. Add tomatoes and cook until almost no liquid remains in pan, stirring frequently, about 25 min. Add cream, vodka and red pepper and boil until thickened to sauce consistency – about 2 minutes. Season to taste with salt & pepper, add grilled, chopped chicken. Serve over penne, and sprinkle with grated cheese.
