This is another one from Kelly. This is summer in a bowl!
2 c. corn (I use frozen so it makes the salad cold)
1 avocado, diced
1 pint cherry tomatoes, halved
Dressing:
2 Tbsp. olive oil
½ tsp. lime zest
1 Tbsp. lime juice
¼ c. cilantro, chopped
¼ tsp. salt
¼ tsp. pepper
