Blueberry Buckle

This is something that Jon's family loves to eat at get-togethers. I'm not super crazy about it, but given that Jon is half of this equation, I'm including it! :) You could try this with fresh fruit on top.

2 c. flour
2 Tbsp. sugar
2 sticks butter
2, 8 oz. cream cheese
1 c. powdered sugar
16 oz. cool whip
1 can blueberry pie filling

Mix flour, sugar and butter. Press into ungreased 9x13 pan. Bake at 425° for 15-18 minutes. Cool completely. Blend cream cheese and powdered sugar, fold in cool whip. Spread over crust and top with blueberries.

The inspiration

For a couple of years I have been typing up recipes and dreaming of getting them all into a book - one place that I can look for all of our go-to recipes we've compiled over the first 15 years of our marriage. But I hit a slump and became discouraged that this was never going to happen. Until the other night when I was talking to my friends Julie and Eric and they loved the idea, and Eric suggested that instead of a book, I create a blog! This way I could post what I already have typed up, it would all be in one spot, and maybe someday if I ever do actually get it put into a cookbook, it will be ready!
