2 lbs. shrimp
2 in. piece of ginger, peeled & grated
3 large cloves garlic, minced
2 tsp. Dijon mustard
1 tsp. hot red pepper flakes
1 jalapeno pepper, seeded & chopped
1 tsp. salt
¼ c. lemon juice
¼ c. extra virgin olive oil
Peel & devein shrimp, set aside. Combine all other ingredients except for olive oil, then stream in olive oil with a whisk. Toss clean shrimp in marinade and refrigerate for about 3 hours. Put on skewers and grill for 5-10 min. Serve with Fresh Lemon Rice.

I love to serve this with pasta and alfredo sauce! But that lemon rice is to DIE FOR!
